Marzipan

Ingredients:
110gr peeled and thinly minced almonds
200gr sugar
3tbs water
Lemon juice
Pastry colours

Preparation:
In a small pan melt sugar in 3 tbs water.
Pour batter over the table –better if a marble one- knead fast with a wooden spoon, add some lemon juice.

When batter became firm such as a white ball dough, add almonds and knead well till dough is uniform.

Divide dough in as many pieces as many colours you want to use.
As soon as marzipan is coloured using your hand palm prepare small balls.

You can prepare delicious sweets pressing a marzipan ball between two walnut kernels, or peeled almonds, or a pitted date, or an open plum.
