Carrots cake

Ingredients:
4 eggs (4 yolks and 2 whites) 200gr sugar 200gr grated peeled carrots 240gr minced hazelnuts (with skin) Grated lemon skin Powdered sugar
Preparation:
In a medium mixing bowl combine 4 yolks with sugar, a pinch salt, lemon skin. Beat well with a wooden spoon, add carrots and minced hazelnuts.
Beat whites till stiff peaks form, very gently add to carrots mixture, use down-up movements.
When mixture is uniform pour it in 24cm prepared pan and bake in 250°C gas oven (or 160°C electric oven) for 25/30 minutes.
Before serving sprinkle carrots tart with powdered sugar.
