Desserts Recipes - Tea cakes, biscuits
Savoiardi biscuits

Ingredients for 300gr biscuits:
4 eggs
120gr caster sugar
100gr white flour
50gr potatoes flour
Shortening
Powdered sugar

Preparation:
In a medium mixing bowl beat egg whites with 100gr sugar till stiff peaks form.

In another bowl, combine remaining 20gr sugar with 4 yolks, beat for 1 minute, don’t over beat.

Add yolks to whites stirring from down to up. Do the same movements combining flour.

Grease with shortening oven-paper, sprinkle with flour and arrange over an oven-pan.
Than, fill a pipe bag with mixture and on an oven paper arrange sticks 10cm length and 3cm wide.

Set aside for some minutes, sprinkle with sieved powdered sugar and bake in preheated 180°C oven.

Savoiardi biscuits are ready as soon as golden. Remove foil and cool. Set aside and serve the day after.
