Carnival tortelli

Ingredients for 4 servings:
150gr flour 50gr butter 50gr sugar 4 whole eggs 1/4lt water 1 grated lemon skin 1 dose vanilla Salt Powdered sugar Oil or lard to fry
Preparation:
In a medium pan combine water, butter, salt, lemon skin and get boil.
As soon as butter is melt take away from heat and pour sieved flour, stir energetically to avoid lumps. Cook again and stir for some minutes till dough detaches from pan and forms a ball.
Take away form heat and add one egg, mix very well before add next egg. Finally combine with sugar and vanilla.
Knead well till dough is firm and smooth. Set aside for one hour.
In a medium pan heat oil or lard, when ready take small pieces of dough using a tablespoon and let fry.
Cook few tortelli per time because dough will pop over and needs more room. Gold all sides. Drain and dry with paper towel, sprinkle with powdered sugar and serve warm.
