Ingredients:
200gr rice
100gr white flour
40gr sugar
6 eggs
50gr butter
1lt milk
1 grated lemon skin
2 tsp rum
Salt and oil to fry
Preparation:
In a medium pan heat milk, pour rice and when half cooked add some salt, butter, sugar and lemon skin.
Finish to cook rice, when ready drain in a medium mixing bowl.
Set aside to cool and add rum, yolks, flour. Mix very well.
Beat whites till stiff peaks form and add gently to previous mixture
In a medium pan warm oil, when hot pour batter using a tbs and fry.
Turn fritters and fry all sides, when gold drain and dry with a paper towel. Sprinkle with powdered sugar and serve.
