Castagnole

Ingredients for 10 servings:
800gr white flour
150gr butter
200gr sugar
4 whole eggs
6tbs rum
1 dose baking powder
oil or lard to fry
one pinch salt
Powdered sugar

Preparation:
Fare sciogliere lentamente il burro in un pentolino.
In a small pan melt slowly butter.

In una terrina sbattere con un cucchiaio di legno le uova intere con lo zucchero, aggiungere il burro e il rum, e infine poco per volta la farina setacciata col lievito e il sale. In a medium mixing bowl beat egg and sugar using a wooden spoon, add butter, rum and very slowly sieved flour, baking powder and salt.

Versare il tutto sulla spianatoia e lavorarlo ancora per 1 minuto.
Pour all over a wooden surface and knead well for one minute more.

Prendere un po’ di impasto e formare dei cilindri non più grossi di un pollice, tagliarli a pezzetti e arrotolarli.
Take some dough and shape cylinders as big as a thumb, cut in pieces and roll on them selves up.

Friggerli nell’olio bollente facendo attenzione che la temperatura dell’olio resti costante per non farlo fumare.
Fry in hot oil till gold is uniform. Oil should keep the same temperature.

Quando si saranno dorati in modo uniforme, scolarli su carta assorbente. Servire le castagnole spolverizzate di zucchero a velo. When ready drain on paper towel. Serve castagnole sprinkle with powdered sugar.
