Scarcedda of Easter

Ingredients:
Flour Eggs Sugar Olive oil Cremortartaro Vanilla Bicarbonate Salt Milk
Preparation:
This is a rite ring-cake, with an odd number of eggs between one and twenty-one. Traditionally it’s a gift for fiancés or children on the Easter day.
Knead well and fast: combine 1 kg flour with 5 yolks, 200gr sugar, 1/2 glass olive oil, 15gr cremortartaro, 2 doses vanilla, one pinch bicarbonate, one pinch salt and few milk.
Knead a dough, divide in small pieces to shape small baskets or small doves…
In each small mould place an egg with shell (previously cook egg for 3 minutes). Set aside some dough and roll the remaining on a oven pan.
Arrange on the surface the small moulds with egg, fix them with dough strips arranged as a cross.
In a cup beat an egg and “paint” all with a small brush. Bake in oven till surface is gold.
