Rice cake

Ingredients for 6 servings:
1lt milk
200gr rice
200gr sugar
4 whole eggs
200gr almonds, peeled and minced very thin
50gr diced candy citron
Grated lemon skin
Salt
Butter
Grated bread

Preparation:
In a medium pan boil milk with one pinch salt, pour rice and cook stirring often till milk is all absorbed.

Take away form fire, add sugar, almonds, lemon skin, citrus and cool.

Add eggs, beat well everything and pour all in a 24cm diameter oven pan greased with butter and sprinkled with grated bread.

Bake in 200°C oven for 1/2 hour.
Cake is ready when surface is crusty and gold or till a wooden toothpick comes out clean.
Remove from pan and serve lukewarm or cool.
