Ingredients for 6 servings:
- for crusty dough
200gr white flour
100gr butter
100gr sugar
2 egg yolks
-for filling
400gr ricotta cheese
100gr one slice ham
1 diced mozzarella
Grated roman cheese
1 whole egg and 1 yolk (set egg white apart)
Sugar
Salt
Pepper
Oil for the pan
Preparation:
Over a wooden surface pour flour and make small mountain. Add yolks, diced butter, sugar, salt and knead all fast.
Shape a ball and set aside.
In the meanwhile, in a mixing bowl sieve ricotta, add diced ham and diced mozzarella, one tbs roman cheese, one tbs sugar, one whole egg, one yolk, salt and pepper. Stir well all ingredients.
Roll crusty pastry in two thin discs of sheets, one bigger than the other.
Grease with oil the pan and with the bigger disc cover the bottom.
Fill with prepared stuffing and cover with the other pastry disc. Fold edges very well.
Beat gently the remaining white using a fork and “paint” surface cake . bake in 200°C for 45 minutes.
