Carbonara sauce
|

Ingredients for 4 servings:
100gr diced bacon 1 tbs olive oil 1 clove garlic onion 4 eggs 2 tbs grated Romano cheese 2 tbs grated parmesan Salt Pepper
Preparation:
In a medium pan, brown bacon till crisp with oil, garlic. Take garlic out.
In a large tureen, beat eggs with 1 tbs Romano cheese and 1 tbs parmesan, add already grained pepper.
Cook pasta (spaghetti, bucatini or short pasta) till tender but firm. Drain well and pour immediately over sauce. Toss well and pour all in a hot pan, mix till eggs are a yellow cream.
Season with remaining grated cheeses.
