Beans and bacon sauce
|

Ingredients:
150gr dry beans 1 tbs chopped bacon Celery, carrot, onion 1 leave bay 1 clove garlic Olive oil, salt
Preparation:
In a medium earthenware pan, place beans, bacon, bay, celery, carrot, onion and cover with warm water.
Boil and let boiling using low heat for 2 hours or till beans are tender. Add salt in the meantime.
Drain well, save a cup of cooking water and set aside. Sieve 1/3 of beans using manual food mill.
In a medium-pan brown sliced garlic with 3 tbs oil, pour beans and sieved beans, let cook for a while, add a small cookware water and cook for some minutes.
Use this sauce over pasta or rice.
