Bolognese sauce
|

Ingredients for 4 servings:
200gr milled beef meat 50gr stretched minced bacon 60gr butter 30gr chopped celery 30gr chopped carrot 30gr chopped onion 1 tbs tomato paste
Preparation:
In a medium-mixing bowl (better is if bowl is made by earthenware) brown butter and bacon. Use high heat.
Add celery, carrot, onion and cook till veggies water is evaporated.
Combine with meat and sear till meat is brown.
Pour tomato (tomato paste must be melted in one cookware), add salt and pepper as liked.
Cover the pan and cook for 2 hours using low heat.
If necessary add warm water
When ready combine ragù with left butter and dress small pasta.
